How to Make Soft White Bread Rolls

uncooked dough balls for soft white bread rolls
  1. Warm the milk a little over low heat on the hob.
  2. Pour a little of the milk into a bowl with the yeast and mix.
  3. In a larger bowl, add the flour, salt, and butter.
  4. Then, rub the butter into the flour.
  5. Next, pour the yeast and milk mixture and the rest of the warm milk into the flour bowl and mix the ingredients with your hand or a wooden spoon.
  6. Use your hands to form the ingredients into a soft dough.
  7. Sprinkle some flour over your worktop and turn the dough from the bowl to the work surface.
  8. Knead the dough for at least 10 minutes until it is smooth and elastic.
  9. Return the dough to the bowl and cover with cling film.
  10. Leave the bowl in a warm place for one hour to allow the dough to rise.
  11. After an hour, turn the dough back out onto the work surface and knead for another 10 minutes.
  12. Divide the dough into equal pieces. I usually make 12 soft white bread rolls out of this amount of dough, but you can make more or less depending on the size of rolls you want.
  13. Roll each piece of dough into a smooth, round ball.
  14. Put all the dough balls on a baking tray and cover with a dry cloth. Leave to rise for a further 10 minutes.
  15. While waiting for the dough to rise, preheat the oven to 220C/ 425F/ Gas Mark 7.
  16. Put the baking tray in the oven and cook for 15 minutes before checking the loaf. If the rolls are golden and spring back when you touch them, they are ready. Otherwise, return to the oven for a further 5-10 minutes.
  17. When the soft white bread rolls are cooked, place them on a wire rack to cool and cover them with a cloth to ensure they stay soft.

Additional Tips for Making Bread Rolls

  • You might wonder if you can make soft white bread rolls with plain flour instead of strong white bread flour. The answer is yes; you can make a white bread roll recipe with plain flour. However, the way the gluten acts in plain flour is slightly different, so switching flours may alter the texture of the bread slightly.
  • To make smaller rolls, divide the dough into more pieces. On the other hand, if you want to make larger rolls, divide the dough into fewer pieces.
  • You can add various flavours to your dough to try different roll variations. Adding dried onions, grated cheese, or various herbs or spices can elevate a white loaf into a delicious soup accompaniment.
  • The bread is best straight from the oven, although it is harder to slice while still warm. You can eat the bread up to four days after baking if you store it at room temperature. However, Melissa Knorris says you can keep bread for up to six days if you store it in a linen bag.
  • If the bread begins to go stale, dice it to make croutons, add it as a thickener to another soup, such as ribollita, or make some breadcrumbs for a meal topping.
