Avocado Soup Recipe: An Amazing and Healthy Chilled Soup

Avocado soup is a refreshing and healthy light meal option. The creamy texture of avocado, mixed with the tangy taste of lime, creates a delicious and unique flavour perfect for a warm summer day. Better still, the avocado soup recipe is exceptionally easy to make as it is a no-cook recipe.

People typically serve this American soup cold, although it is possible to warm it before serving. If you prefer to eat the soup warm, just heat it gently in the pan until it is warmed through. Do not bring the soup to the boil, or it might separate and become dark and unappealing in appearance.

You may notice that the recipe includes an optional chilli, which adds some heat and an extra layer of flavour. It gives the soup a Mexican twist, replicating the flavours of Guacamole. However, you can leave the chilli out of the avocado soup recipe if you prefer a creamier taste. Similarly, you can add extra chilli to the soup if you prefer spicy food.

Ingredients for the Avocado Soup Recipe

  • 2 ripe avocados with the rind and seed removed

  • 1 litre of vegetable stock

  • Juice of one lime

  • A handful of fresh coriander (cilantro) finely chopped

  • 2 spring onions (green onions) finely diced

  • 1 clove of garlic

  • 1 red chilli, finely diced (optional)

  • Salt to taste

Directions: How to Make the Avocado Soup Recipe

  • Roughly chop the avocados after removing the stone and rind.
  • Add all the ingredients to a blender and blitz until smooth.
  • Serve the soup in bowls immediately, or chill for a while in the refrigerator before chilling to make the soup even more refreshing,
  • Alternatively, warm the soup briefly in a pan if you do not want cold soup.

Notes

  • You can add more chilli for a spicier soup or remove this ingredient if you prefer to retain the creamy flavour.
  • Optional toppings for the avocado soup recipe include croutons, extra cilantro or sliced chillies, flavoured oil, a dollop of natural yoghurt, or nachos.
  • Non-vegetarians might also like to add some crispy bacon for texture and an umami flavour.

You can store the avocado soup in the refrigerator for three to four days.
