Greek Lentil Soup: An Easy Fakes Soup Recipe

Ingredients for Greek Lentil Soup (Fakes)

  • 8 oz brown or green lentils
  • 3 cloves of garlic, crushed
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 1-litre vegetable stock
  • 2 tbsp tomato puree
  • 5 tbsp olive oil
  • 1 tsp dried oregano
  • 2 bay leaves
  • 1 tsp dried rosemary
  • 1 tbsp red wine vinegar or balsamic vinegar
  • Salt and ground black pepper to taste

How to Make Greek Lentil Soup (Fakes)

  1. Check the lentils packaging as some lentil need pre-soaking before cooking.
  2. Put the lentils in a pan with water that rises an inch above the lentils.
  3. Put the pan on the hob and bring to the boil. Cook for 10 minutes, then drain the lentils.
  4. Add one tablespoon of the olive oil to a large saucepan and put over medium heat on the hob.
  5. Add the onion, garlic, and carrots to the pan, then cook for approximately five minutes, or until the onions have become soft and translucent.
  6. Next, add the lentils to the pan, along with the bay leaves, oregano, and rosemary. Cover with the vegetable stock.
  7. Turn the hob to high to bring the soup to the boil, then reduce the heat to medium and simmer for 10 minutes.
  8. Season the soup with the salt and freshly ground black pepper and stir in the tomato puree.
  9. Put the lid on the pan and simmer the soup for a further 30 or 40 minutes until the lentils have softened.
  10. If the soup is a little thick, then add extra water.
  11. To serve, spoon the Greek lentil soup into bowls and then drizzle with a little olive oil and either red wine vinegar or balsamic vinegar.
