Ingredients for Sweet Potato and Chilli Soup
- 1 tbsp. olive oil
- 1 kg sweet potatoes, peeled and chopped
- 2 red chillies, one for the soup and one for serving
- 1 large onion, finely chopped
- 1 litre of vegetable stock
- 2 cloves of garlic, crushed
- ½ tsp. chilli powder
- ½ tsp. smoked paprika
- Salt and pepper to taste
How to Make Sweet Potato and Chilli Soup
- Heat the oil in a large saucepan over medium-high heat.
- Add the chopped onion and crushed garlic.
- Cook for approximately three minutes while stirring until the onion and garlic have softened.
- Add one chopped red chilli, the chilli powder, and the smoked paprika to the pan, then cook for a further minute.
- Add the chopped sweet potatoes to the pan and cover with the vegetable stock.
- Bring the pan to the boil, then reduce the heat to a simmer.
- Cook for a further 15 minutes, to until the sweet potatoes are tender.
- Season with salt and pepper to add flavour, then remove the pan from the heat.
- Blend the ingredients with a hand blender. Alternatively, pour the contents of the pan into a food processor to blitz until smooth before returning to the pan.
- Return the pan to the heat and cook for a further five minutes before serving.
- Thinly slice the second red chilli and add to the bowls of soup for decoration.
