Ingredients for Pea and Mint Soup

  • 12 oz./ 350g frozen peas
  • 500 ml of vegetable stock
  • 4 shallots, finely chopped
  • 2 tbsp. fresh mint, finely chopped
  • 3 cloves of garlic
  • 2 tbsp. olive oil
  • Salt and pepper to taste

How to Make Pea and Mint Soup

  1. Finely chop the shallots, garlic, and mint.
  2. Heat the oil in a pan over low heat, then cook softly for two or three minutes until the ingredients have softened and the shallots have become translucent.
  3. Add the peas and the vegetable stock to the pan.
  4. Next, turn the pan to medium heat, and simmer for 15 minutes.
  5. Blend the soup to the consistency of your choice, either in a food processor or using a hand blender.
