Ingredients for the Tourlou Recipe
- 2 potatoes, peeled and diced
- 1 large aubergine/ eggplant, diced
- 1 large courgette/ zucchini, diced
- 1 brown onion, diced
- 2 large carrots, diced
- 400g tin of chopped tomatoes
- 3 tbsp extra virgin olive oil
- 3 cloves of garlic, minced
- 1 tsp dried oregano
- 300 ml vegetable stock
- Salt and freshly ground black pepper to taste
How to Make the Tourlou Recipe
- Preheat the oven to 180C/
- Prepare all the vegetables and arrange them in a deep baking tray.
- Put a pan over medium heat and add the olive oil.
- Add the garlic and saute for a minute or two before adding the chopped tomatoes, vegetable stock, and oregano.
- Simmer the mixture for five minutes, then pour over the prepared vegetables.
- Cover the vegetables with a layer of baking paper, then seal the deep baking tray with aluminium foil.
- Put the baking tray in the oven and cook for approximately 40 minutes.
- Serve as soon as you take the dish from the oven.
Additional Tips for Making Greek Vegetable Soup
- A popular garnish for the popular Greek soup is a sprinkling of feta cheese. Do not use it if you want a dairy-free or vegan soup.
- If you are not an oregano fan, try using basil instead.
- To make the dish thinner if you are eating it as a soup rather than a vegetable stew, add some more vegetable stock or water to the tourlou recipe.
- Serve the soup with your favourite bread or some crunchy croutons.
