Courgette and Mint Soup: Easy Soup Recipe

Sometimes called zucchini or summer squash, courgettes are a delicious and fresh ingredient to eat in the summer months while they are in season. There are many ways that you can use courgettes, and they are particularly tasty in a summery soup, such as this courgette and mint soup.

We came up with this courgette and mint soup that has a zesty and refreshing yet creamy flavour. It is a simple soup recipe to make, and all the ingredients are widely available. This soup is also easy to adapt to your own tastes, and we have included some tips for doing so at the end of the recipe.

Ingredients for Courgette and Mint Soup

  • 6 courgettes, thinly sliced
  • 1 onion finely chopped
  • 3 cloves of garlic, crushed
  • 750 ml vegetable stock
  • 200 ml crème fraiche
  • Zest of one lemon
  • A small bunch of fresh mint leaves, finely chopped
  • 3 tbsp olive oil
  • A pinch of salt
  • Black pepper to taste

How to Make Courgette and Mint Soup

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onions and the salt to the pan and cook for five minutes until the onions are beginning to soften.
  3. Then, add the garlic to the pan and cook for a further two minutes.
  4. Add the sliced courgettes to the pan, and cook for a further 20 minutes, stirring occasionally to make sure all the courgettes are cooked through.
  5. Pour the vegetable stock over the courgettes, onion, and garlic, then bring the pan to the boil.
  6. You then need to blitz the soup to your preferred consistency. You can do this using a hand blender or by transferring the soup to a food processor and blitzing before returning to the pan.
  7. Add three-quarters of the chopped mint and 150 ml of the crème fraiche to the soup. Retain the rest of the mint and crème fraiche for the top of the soup.
  8. Blitz the soup again to combine the mint and crème fraiche with the other ingredients of the soup.
  9. Season with black pepper to taste.
  10. Spoon the soup into bowls, add a scoop of crème fraiche, and sprinkle the lemon zest and remaining mint over the top.

Additional Tips

  • You can make this courgette and mint soup without the crème fraiche if you do not eat dairy products. If you leave out the crème fraiche, the soup will have a fresher and less creamy taste.
  • Use less garlic if you do not like to have a strong garlic flavour in your food.
  • Similarly, you can omit the lemon zest from this recipe if you wish.
