Ingredients for Cauliflower and Blue Cheese Soup
- 2 heads of cauliflower
- 5 oz. / 140 g blue cheese
- 1 small onion finely diced
- 2 sticks of celery
- 1 medium white potato peeled and diced
- 1-litre vegetable stock
- A knob of butter
- 2 tbsp. olive oil
- 1 tsp dried parsley
- Salt and black pepper to taste
How to Make Cauliflower and Blue Cheese Soup
- Chop the end of the stalk from your cauliflower heads and remove the outer leaves.
- Then, break off the cauliflower florets and dice the remaining stalk.
- Peel and dice the potatoes, chop the onion, and slice the celery.
- Heat the oil in a pan over medium heat and add the onions, potato, and celery.
- Sautee the ingredients for a few minutes, then add the butter and cover with a pan lid.
- Cook for a further five minutes.
- Add the vegetable stock and the chopped stalks of the cauliflower.
- Simmer for 10 minutes and then add the chopped cauliflower florets.
- Simmer for a further 5 minutes, then add the parsley.
- Either transfer the mix to a food processor and blitz before returning to the pan, or blitz the mixture using a stick blender.
- Add the crumbled blue cheese and stir through until most of the cheese pieces are melted.
- Season the soup with salt and freshly ground black pepper before serving.

- You can use any blue cheese you enjoy in this soup. We like stilton.
- This soup will retain its texture and flavour if you are serving it from a catering soup kettle. You just need to multiply the ingredients equally.
- To add more flavour to the soup, try adding a crushed clove of garlic and adding it to the pan at the same time as the onions. Another way of adding flavours is to stir in some chopped chives at the last minute.
