Broccoli and Cauliflower Soup: Easy Soup Recipe

Cauliflower and broccoli are two vegetables that you will often see sitting side by side on a dinner plate, and there is a good reason for doing so. The flavours of each of the vegetables work well together, and they have a similar texture. Therefore, they work well together in broccoli and cauliflower soup.

Both broccoli and cauliflower are members of the brassica family of vegetables. Other brassicas include Brussels sprouts, kale, and cabbage. Not only are brassicas full of flavour, but they are also nutritionally beneficial, says Natural Health Magazine. They are full of vitamins A, C, and K, and also contain folates.

Broccoli and cauliflower soup is exceptionally easy to make, so it is something that even a kitchen novice can create. Here is how to make a simple yet delicious and creamy cauliflower and broccoli soup.

Ingredients for Broccoli and Cauliflower Soup

  • 1 large head of cauliflower
  • 2 medium heads of broccoli
  • 1 medium onion, finely diced
  • 2 sticks of celery, finely diced
  • 750 ml vegetable stock
  • 200 ml double cream
  • 2 tbsp. olive oil
  • Salt and freshly ground black pepper to taste

How to Make Broccoli and Cauliflower Soup

  1. Remove the florets from your broccoli and cauliflower, then dice your onion and celery.
  2. Add the oil to a large pan and put over medium heat on the hob.
  3. Put the diced onion and celery in the pan, and cook for five minutes until the onions and celery are softened.
  4. Add the florets of broccoli and cauliflower, then cover with the vegetable stock.
  5. Increase the heat and boil for 15 minutes.
  6. Turn off the heat, then blitz the soup either with a hand blender or in a food processor before returning to the pan.
  7. Turn the hob to medium heat and add the cream to the soup.
  8. Season with salt and black pepper to taste and stir in the cream and seasoning.
  9. Cook for a further five minutes, then serve the soup into bowls.

  • You can serve your broccoli and cauliflower soup with the bread of your liking.
  • It is easy to make this soup in a soup maker.
  • To add some texture, top with croutons or crispy bacon. The soup is also nice served with a topping of grated cheese.
