Broccoli and stilton are a fantastic combination, and you can use these ingredients to make delicious broccoli and stilton soup. Broccoli is packed with nutrients, so it is an excellent vegetable to include in your diet.

If you have children and they are reluctant to eat broccoli, this is a great way to hoodwink them into eating this vegetable. Therefore, they can benefit from the nutrients this vegetable add to your diet.

The stilton adds another level to basic broccoli soup. It has a creamy flavour and texture but also gives the soup a bit of tanginess. If you do not have stilton, any other blue cheese with a creamy texture is suitable to use in this recipe. Simply interchange the stilton for the blue cheese of your choice.

Ingredients for Broccoli and Stilton Soup

  • 2 heads of broccoli
  • 5 oz. / 140 g stilton (or other blue cheese)
  • 1 small onion finely diced
  • 2 sticks of celery
  • 1 medium white potato peeled and diced
  • A knob of butter
  • 2 tbsp. olive oil
  • 1-litre vegetable stock
  • 1 tsp dried parsley
  • Salt and pepper to taste

How to Make Broccoli and Stilton Soup

  1. Chop the end of the stalk from your broccoli heads, then break off the florets and dice the remaining stalk.
  2. Peel and dice the potatoes, chop the onion, and slice the celery.
  3. Heat the oil in a pan over medium heat and add the onions, potato, and celery.
  4. Sautee for a few minutes, then add the butter and cover with a pan lid.
  5. Cook for a further five minutes.
  6. Add the stock and the chopped stalks of the broccoli.
  7. Simmer for 10 minutes and then add the chopped broccoli florets.
  8. Simmer for a further 5 minutes before adding the parsley.
  9. Either transfer the mix to a blender and blitz before returning to the pan, or blitz the mixture using a hand blender.
  10. Add the crumbled stilton and stir through until most of the stilton pieces are melted.
  11. Season the soup with salt and pepper before serving.
