Country Vegetable Soup: Easy Soup Recipes

Vegetable soup is easy to make, and it is a nutritious meal as you benefit from the nutrients of the different vegetables you use. There are many variations of vegetable soup, and one of my favourites is a country vegetable soup. This has a buttery flavour, and you can adapt the consistency to suit your own tastes.

Ingredients for Country Vegetable Soup

  • 6 medium carrots
  • 4 sticks of celery
  • ¼ of a white cabbage
  • 2 medium white potatoes
  • 1 onion
  • 1 clove of garlic (optional)
  • 2 vegetable stock cubes
  • A bay leaf
  • 2 oz. butter
  • 2 tbsp. olive oil
  • 1 heaped tablespoon of plain flour
  • Salt and pepper to taste

How to Make Country Vegetable Soup

  1. Dice the carrots, potatoes, celery, and onions.
  2. Heat the oil and half the butter on high heat on the hob.
  3. Add the diced vegetables and turn down the heat to medium.
  4. Sprinkle over the flour and stir the vegetables, oil, butter, and flour together. This will help to thicken the soup.
  5. Crush the garlic and add to the pan.
  6. Sautee the vegetables and garlic for five minutes.
  7. Sprinkle over the stock cubes and add enough water to cover all the vegetables.
  8. Simmer for 10 minutes.
  9. Meanwhile, chop the cabbage into small pieces.
  10. Add the cabbage and the bay leaves to the pan, then simmer for 15 minutes.
  11. Add the butter and stir through the soup.
  12. Remove the bay leaf.
  13. You now have the option to add salt and pepper to the soup as it is without blending or to blend the soup to your preferred consistency.
  14. If you want a completely blended soup, transfer the whole soup mixture to a food blender and blitz until the mixture is smooth. Alternatively, use a hand blender and blitz until there are no lumps.
  15. For a thick soup that still has some pieces of vegetable, transfer half the mixture to the blender using a ladle. Blitz until smooth, then transfer back to the pan with the remaining soup and stir through. Or, give the soup a quick blitz with a stick blender.

  • Serve the country vegetable soup on its own or with croutons or bread.
  • Experiment with different vegetables.
  • Add some herbs for extra flavour.
  • Use liquid stock or homemade vegetable stock if you prefer this to stock cubes.
  • You can make this soup without the butter if you are vegan or follow a dairy-free diet due to a milk allergy or lactose intolerance. It will have a less creamy texture.
