Celeriac Soup- Easy Soup Recipe

Most of the soups on this website are ones that I have been making for years. Every now and again, I try using new ingredients to create different soups, and this celeriac soup is one of them.

Celeriac is a root vegetable that I had not tried until recently, and it is now one of my favourite vegetables. It is the celery root, and it has the flavour of celery without that stringy consistency that many people find unpleasant. Its texture is closer to that of turnips, swedes, and carrots.

I have always loved the flavour of celery in soup, and it is an ingredient that you will find in the ingredients list of many of the soups on Super Souper Ed. I also enjoy the flavour of celery in stews and broths. It is this that encouraged me to try celeriac in my cooking.

First, I tried it roasted, then mashed. I have now devised a delicious soup recipe that my family enjoyed.

Ingredients for Celeriac Soup

  • 2 oz./ 55g butter
  • 2 celeriac, peeled and cubed
  • 1 leek, trimmed and sliced
  • 1 onion, finely sliced
  • 2 cloves of garlic, crushed
  • 1 litre of vegetable stock
  • 120 ml/ 4 fl. oz. double cream
  • Salt and black pepper

How to Make Celeriac Soup

  1. Peel and chop the celeriac, trim and slice the leek, crush the garlic, and slice the onion.
  2. Melt the butter over medium heat in a pan on the hob.
  3. Add the celeriac, leek, onion, and garlic.
  4. Sweat the vegetables for about 10 minutes, or until they begin to soften.
  5. Add the vegetable stock and turn up the heat to bring the soup to a boil.
  6. Once boiling, turn down the heat and simmer for approximately 20 minutes.
  7. Liquidize the mixture either with a hand blender or by transferring the mixture to a food processor and blitzing.
  8. Return the mixture to the pan, then add the cream, salt and pepper.
  9. Stir through and warm over low heat for five minutes before serving.

Additional Tips

  • Serve with a swirl of cream, a sprinkle of parsley, or a drizzle of olive oil over your celeriac soup.

  • If you are not vegetarian, you can make this celeriac soup with chicken stock if you prefer.
