Ingredients for French Garlic Soup/ Tourin Recipe

  • 3 tbsp olive oil
  • 1 l/ 36 fl. oz. vegetable or chicken stock
  • 2onions, finely diced
  • 2 heads of garlic, peeled, separated, and chopped
  • 4 free-range egg yolks
  • 2 bay leaves
  • A sprig of thyme or 1 tsp dried thyme
  • 2 tbsp plain flour
  • 1 tbsp sherry vinegar
  • Salt and black pepper to taste

How to Make French Garlic Soup

  1. Put the olive oil in a pan over medium heat on the hob.
  2. Add the onions, garlic, thyme, and bay leaf, then cook until the onions and garlic are softened but not brown.
  3. Next, add the flour to the pan and stir it into the onions and garlic.
  4. Add the stock to the pan and whisk, so it thickens with the flour.
  5. Simmer the soup for 20 minutes, then remove from the heat and take out the bay leaves before blending with a stick blender.
  6. In a bowl, whisk the egg yolks with the sherry vinegar.
  7. Slowly pour the egg mixture into the pan and whisk into the soup while it is still off the heat.
  8. Season the French garlic soup with salt and black pepper to taste.
  9. Serve the soup in bowls and garnish it with croutons.

Additional Tips

  • You can make a gluten-free version of the soup by omitting the flour, although it will have a thinner consistency.
  • It is possible to make a vegetarian/ vegan version of the soup if you use vegetable stock instead of chicken stock and leave out the egg yolk if you are vegan.
  • You can increase or decrease the garlic in the French garlic soup to suit your tastes.
