As the name suggests, the key ingredient of any pumpkin soup recipe is pumpkins, a type of squash. There are many variations of the soup that include a diverse range of flavourings and other ingredients, and many families have their own version of pumpkin soup they have passed down through the generations.
It is one of the most popular soups in America, although it is a soup enjoyed by many countries and cultures across the globe. Some have ingredients that reflect the typical flavourings associated with a culture’s cuisine, such as butternut squash and ginger soup, squash and apple soup, and squash and chilli soup. However, the American version focuses simply on the delicious flavour of pumpkin with cream added for richness and to create a pleasant consistency.
You may notice that the name of this soup features pumpkin, but some of the comparable soups listed in the previous paragraph refer to butternut squash. An easy pumpkin soup recipe that even cooking novices can make.
Ingredients for the Pumpkin Soup Recipe
1 kg pumpkin, peeled, deseeded and diced
2 onions, finely chopped
2 tbsp olive oil
700 ml vegetable stock
150 ml double cream
Salt and freshly ground black pepper to taste
Pumpkin seeds to toast for garnish
Directions: How to Make the Pumpkin Soup Recipe
- Add the olive oil to a large pan over medium-high heat on the hob.
- Next, add the onions to the oil and cook for approximately five minutes until soft but not brown.
- Then, add the diced pumpkin to the pan and cook for another 10 minutes, stirring occasionally.
- Pour the stock over the pumpkin and onions, and then bring the liquid to a boil.
- When the liquid boils, reduce the hob heat to low and simmer for 15 minutes.
- Add the double cream to the soup, season with salt and black pepper, and then blitz the ingredients to make a thick soup. You can use either a hand blender or a food processor.
- Toast some pumpkin seeds in a pan or oven for a few minutes to use as a garnish. Alternatively, add a swirl of cream to the soup bowls or sprinkle with crunchy croutons.
