Mushroom Soup Recipe- Easy and Budget-Friendly

Mushroom soup is perfect all year round as it is warming for the autumn and winter months, and a light meal option for spring and summer. It is also a quick and easy meal to make that is budget-friendly, so it is perfect for busy families who try to keep their food costs down.

Not only is it a popular option in the UK, but it is also one of the most popular soups in America. There are also various international versions of the dish, including zupa grzybowa, a delicious Polish mushroom soup.

Ingredients for Mushroom Soup Recipe

  • 300g button mushrooms
  • 300g chestnut mushrooms
  • 3 sticks of celery
  • 1 onion
  • 3 cloves of garlic
  • 1.5 litres of vegetable stock
  • Knob of butter
  • Salt and freshly ground black pepper
  • 75 ml double cream
  • 1 tbsp olive oil

How to Make Mushroom Soup

  1. Clean and slice the mushrooms
  2. Then, chop the onions and celery.
  3. Crush the garlic.
  4. Add the butter and oil to a large saucepan, then put the pan over medium heat on the hob.
  5. Next, add the celery, onions, and garlic and cook for two minutes.
  6. Add the mushrooms to the pan and cover with the pan lid.
  7. Cook for a further five minutes.
  8. Add the vegetable stock to the pan, then bring to the boil.
  9. Once boiling, reduce the heat and simmer for 15 minutes.
  10. Season with salt and black pepper.
  11. Next, add the cream and simmer for a few minutes.
  12. If you prefer a chunky mushroom soup with whole pieces of mushroom, you can now remove the soup from the heat and serve it into soup bowls. 
  13. For a thick soup with some chunks, give it a quick blitz with a stick blender or puree half in a food processor, then return the blitzed half to the pan.
  14. Alternatively, for a thinner, smoother soup, put the whole soup mix in the food processor or blend thoroughly in the pan using a stick blender.

Additional Tips

  • Alter the quantity of garlic in this mushroom soup recipe to suit your own taste.
  • Add some herbs if you wish- parsley is delicious in this soup.
  • For a deeper flavour, use beef stock instead of vegetable stock- not suitable for vegetarians.
  • Serve on its own or with croutons, flatbread, crusty bread, or dumplings.
  • If you cannot get hold of chestnut mushrooms, use only button mushrooms.
