Spinach and Potato Soup Recipe

Spinach and potato soup is easy to make, budget-friendly and a great vegetarian option. It is also packed with nutrients for maintaining good health. It is a nice change from leek and potato soup, as it has an earthier flavour, similar to that of watercress soup. Here is a quick and easy recipe for spinach and potato soup.

Ingredients for Spinach and Potato Soup

  • 1 lb/ 450 g potatoes, diced
  • 12 oz/ 340 g spinach
  • 1 onion, finely chopped
  • 3 cloves of garlic
  • 1-liter/ 35 fl. oz. of vegetable stock
  • 4 tbsp double cream
  • 2 tbsp olive oil
  • 4 tbsp chopped chives
  • Salt and black pepper

How to Make Spinach and Potato Soup

  1. Peel and dice the potatoes, then chop the onions.
  2. Heat the olive oil in a pan over medium heat. 
  3. Add the garlic and onion to the pan and fry for two minutes.
  4. Add the potatoes and cook for another two minutes.
  5. Pour over the stock and simmer for approximately 10 minutes.
  6. Add the spinach to the pan and stir in.
  7. Then, cook for two more minutes.
  8. Season with salt and black pepper and add the chives. 
  9. Blend the mixture in a food processor or with a hand blender to your preferred consistency.
  10. Serve into soup bowls.
  11. Add a swirl of cream or a sprinkling of herbs to each.

  • Serving: This spinach and potato soup is fantastic with croutons and warm crusty rolls.
  • Herbs: If you are not a fan of chives, try chervil or parsley instead. Experiment with different herbs and spices to create a flavour that suits your palate.
