Ingredients for Spinach and Potato Soup
- 1 lb/ 450 g potatoes, diced
- 12 oz/ 340 g spinach
- 1 onion, finely chopped
- 3 cloves of garlic
- 1-liter/ 35 fl. oz. of vegetable stock
- 4 tbsp double cream
- 2 tbsp olive oil
- 4 tbsp chopped chives
- Salt and black pepper
How to Make Spinach and Potato Soup
- Peel and dice the potatoes, then chop the onions.
- Heat the olive oil in a pan over medium heat.
- Add the garlic and onion to the pan and fry for two minutes.
- Add the potatoes and cook for another two minutes.
- Pour over the stock and simmer for approximately 10 minutes.
- Add the spinach to the pan and stir in.
- Then, cook for two more minutes.
- Season with salt and black pepper and add the chives.
- Blend the mixture in a food processor or with a hand blender to your preferred consistency.
- Serve into soup bowls.
- Add a swirl of cream or a sprinkling of herbs to each.
