Parsnip and Apple Soup: An Easy Soup Recipe

Ingredients for Parsnip and Apple Soup

  • 6 large parsnips, peeled and sliced
  • 4 medium apples, cored, peeled, and finely sliced
  • 1 large onion, finely diced
  • 1.5-litres vegetable stock
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper to taste

How to Make Parsnip and Apple Soup

  1. Prepare the parsnips, apples, and onion first.
  2. Heat the oil in a large saucepan over medium heat.
  3. Then, add the onion, and cook for approximately five minutes, or until the onions are soft and golden.
  4. Next, add the parsnips and apples to the pan, and cook for another five minutes, stirring occasionally.
  5. If the ingredients begin to stick to the bottom of the pan, add a splash of water.
  6. Pour the stock over the ingredients, then cover the pan with a lid.
  7. Simmer for approximately 35 minutes until the parsnips are cooked all the way through.
  8. Using either a food processor or a hand blender, blend the mixture to your preferred consistency.
  9. If you have used a food processor, return the soup to the pan after blending.
  10. Season the soup with salt and freshly ground black pepper to taste.
  11. Simmer for a further five minutes to make sure the parsnip and apple soup is piping hot.
  12. Finally, serve the soup into bowls along with your favourite soup accompaniment.

Additional Tips

  • Serving suggestions: Our parsnip and apple soup is delicious with the bread of your choice. Alternatively, add croutons for extra texture.
  • Adding flavour to your soup: If you are not vegetarian or vegan, you can switch the vegetable stock for chicken stock for more flavour. Adding a bay leaf to the pan during cooking will add flavour but remember to remove the bay leaf before serving. You can also try a teaspoon of either parsley, cumin, or curry powder.
  • Bulking up this soup recipe: Try adding a couple of sticks of celery to the pan at the same time as the parsnips and apples.
  • Try apple crisps: A tasty garnish that also adds texture is apple crisps. Thinly slice a peeled and cored apple and put the slices on a baking sheet on a baking tray. Cook the apple slices on low heat in the oven for 30 minutes while your soup is cooking, then use the apple crisps to garnish the soup.
  • Making a creamier version: To make a creamier version of parsnip and apple soup, replace 300 ml of the vegetable stock with double cream.
