Ingredients for Parsnip and Pear Soup

  • 6 large parsnip, peeled and chopped
  • 4 medium, firm pears, cored, peeled, and finely sliced
  • 1 large onion, finely diced
  • 1.5-litres vegetable stock
  • 2 tbsp olive oil
  • Salt and freshly ground pepper to taste

How to Make Parsnip and Pear Soup

  1. Prepare all the vegetables first.
  2. Heat the oil in a large saucepan over medium heat on the hob.
  3. Add the onion, and saute for approximately five minutes, or until the onions are soft and golden.
  4. Next, add the parsnips and pears to the pan, and cook for a further five minutes.
  5. Pour the stock over the ingredients and cover the pan with a lid.
  6. Simmer for approximately 35 minutes, or until the parsnips are cooked all the way through.
  7. Blend the mixture to your preferred consistency using either a food processor or a stick blender.
  8. If you have used a food processor, return the soup to the pan after blending.
  9. Season the soup with salt and freshly ground pepper to taste.
  10. Simmer for a further five minutes to ensure the parsnip and pear soup is thoroughly heated.
  11. Serve into bowls along with the soup accompaniment of your choice.
